The secret of our flesh
Our aging room plays a crucial role in flavor development. Here the meat matures for 28 days at a temperature of 2 to 5ºC and a humidity of up to 70%. This process ensures intense flavor concentration and a nutty aroma.
The RAUW open-fire grill
Our hand-built steel grill, heated by sustainable Kenyan hardwood at 1200ºC, gives the meat that signature flame-grilled flavor. Together with the knowledge and skill of our butchers and chefs, we guarantee the ultimate meat.
